CLICK HERE for Double Dark Chocolate Chip Shortbread Cookies I’ve had contest-winning luck with these by rolling the dough out to ¼-inch thickness between sheets of plastic wrap and cutting it into 1" × 2" rectangles — or, when I’m in a round-cookie mood, I divide the dough into four parts and roll each portion in plastic wrap into a sausage shape, about the diameter of a quarter. I then refrigerate it, slice, and bake (or double wrap the sausage and freeze). They may be my favorite cookie, and they go great with other desserts or coffee! CLICK HERE for Granola Bark.
